3 Tbs. fresh lemon juice

1/2 cup dry vermouth

Kosher salt and freshly ground black pepper

1/4 cup unsalted butter; more for the-parchment

Minced fresh dill or chives for garnish

2 Tbs. minced shallot

4 skinless salmon fillets (6 to 7 oz. each), preferably center-cut

8 oz. (1 scant cup) crème fraîche

2 tsp. finely chopped fresh tarragon
