Prepped Artichokes (see Stage 1)

1 day-old loaf rustic white bread or pain au levain or similar

1/2 cup Olive Oil, (plus more for the bread)

2 tbsp red wine vinegar

2 tbsp sherry vinegar

1 cup cured green olives, pitted (mixed olives work too)

1/2 lb arugula salad

2 oz Manchego cheese, grated

salt and pepper
