Ingredients for 4 servings

1 cup grapeseed oil

2 pounds prime ground chuck

3 cups baby arugula

1 cup dry red wine

1/2 cup sugar

1 tablespoon red wine vinegar

8 ounces Stilton blue cheese, sliced

Sea salt and freshly ground black pepper

1/4 cup red wine vinegar

4 large brioche burger buns (available at Trader Joe's)

3 tablespoons butter

1 teaspoon Dijon mustard

2 large egg yolks

1 tablespoon olive oil

1 garlic clove

3 red onions, cut in half then cut into 1/4 inch slices
