Cremini mushrooms - 30, or white mushrooms, stems removed

Chardonnay - 2 tbsp, or any dry white wine

onion - 1/2 cup, chopped super fine

garlic - 1/4 cup, chopped super fine

ginger - 1/4 tsp, chopped super fine

mushroom stems - 6, finely chopped

green chilly - 1, finely chopped

Cilantro - 1/4 cup, finely chopped

olive oil - 2 tbsp, divided

parmesan cheese - handful, grated

cheddar cheese - handful, grated

breadcrumbs - handful

parsley - 1 tsp, chopped fine

thyme - 1/2 tsp

lemon pepper - 1/2 tsp, optional

red pepper flakes - 1/2 tsp

salt - to taste
