Ingredients for 4 servings

200.0g cooked large prawns

6 spring onions , finely sliced

1 tbsp vegetable stock

1 tbsp chilli garlic sauce (we used Lingham's Ginger Garlic Chilli Sauce)

2 tbsp toasted sesame seeds , to serve

½ cucumber , cut into fingers

1 tbsp chopped pickled ginger (we used Waitrose's Cooks' Ingredients range)

juice 2 limes

2 tbsp soy sauce

250.0g pack soba noodles (we used Clearspring)

FOR THE DRESSING

1 large mango , peeled and cut into chunks
