Ingredients for 4 servings

8 – 10 chicken thigh pieces (skinned and boned)

4 strips of bacon

2 carrots

1 stick of celery

2 onions

1 clove of garlic

½ cup flour

4 tbsp butter

½ cup of white wine

2 cups chicken stock

½ cup cream

1 tbsp chopped fresh tarragon

Salt and pepper

2 sheets of puff pastry – enough to cover 4 pie dishes – if your dishes are shallow and flat you may need more
