4 x 16 oz. Short Ribs

Kosher Salt and freshly ground Black Pepper

2 x carrots, peeled and roughly chopped

1 x onion roughly chopped

2 x celery stalks, roughly chopped

5 x Garlic Clove, thinly sliced

2 cup Barolo or other full-bodied red wine

1 can 16 oz peeled tomatoes, crushed by hand with their juices

1 cup brown chicken stock

1/2 bunch thyme

1/2 bunch Rosemary

1/2 bunch Oregano

1/2 lb Butternut Squash or pumpkin, seeded and peeled

2 tbsp Extra Virgin Olive Oil

2 tbsp honey

2 tbsp balsamic vinegar

1 cup orzo
