I just made this, and found the batter to be scant in trying to cover the 2 layers completely, in an 8" round dish. I would increase the cake ingredients by 1/2 to have ample batter. I also mixed in fresh blueberries with a few teaspoons of the preserves. i would have used all fresh, but i just happened to have the preserves, so i went ahead and used them.

Ingredients for 9 servings

zest of one lemon

1/4 cup granulated sugar

1 1/2 cups all-purpose flour

2 1/2 teaspoons baking powder

1/2 teaspoon salt

1/3 cup butter, melted

1 large egg

2/3 cup milk

1 teaspoon pure vanilla extract

3/4 cup blueberry preserves

1/4 cup firmly packed brown sugar

1/4 cup almonds, finely chopped

2 tablespoons flour

1 tablespoon cold butter
