This is maybe not technically a quiche, I'm not really sure. However, it came out GREAT and I love the potatoes instead of a crust, which I've never been fond of in a quiche. I swapped out feta for asiago, parsley for basil (I just love parsley with potatoes), held the tomatoes and added sundried tomato turkey sausage. totally easy and delicious.

Ingredients for 8 servings

1 1/2-2 x russet potatoes

1 tsp olive oil

1/2 x sweet yellow onion, diced

1 cup button mushrooms

1 x zucchini, diced

1 cup fresh spinach, diced

1 x tomato, diced

1/4 x feta cheese

6-7 x fresh basil leaves, chopped

7-8 x eggs, beaten

1/4 x milk

Sea salt and freshly cracked pepper, to taste
