Ingredients for 2 servings

1 cup chopped onion

1 1/2 cup chopped potato

1 1/2 cup chopped carrot

3-4 cubes curry roux

1 1/2 tbsp oil

4 oz beef

udon noodles or rice, as preferred. 1 1/2 to 2 cups per person, as desired (this usually means about 1 cup uncooked rice, 1 1/2 cups if you’re really hungry)
