This was rich yet fresh tasting, just delicious. I used 1tbs olive oil instead of butter for the last roasting step. Served it on plain polenta garnished with blood orange and fennel fronds. Beautiful.

Ingredients for 4 servings

1 lb pork tenderloin

2 tsp fennel seeds, toasted

3 tsp fresh thyme, chopped

1 tsp salt

¼ tsp black pepper

2 Tbl olive oil

2 fennel bulbs, thinly sliced

2 garlic cloves, minced

½ cup white wine

2 Tbl fennel fronds, chopped

1 Tbl butter, room temperature
