4 cups chicken stock or chicken broth

2 whole bay leaves

1/4 cup peanut butter , mixed with

1 cup diced carrot

24 ounces bone-in skinless chicken breasts

1/2 cup hot water

1 medium anaheim chili , seeded/chopped or 1 (4 ounce) can mild green chilies

4 cloves garlic , pressed or minced

1 tablespoon olive oil

1/3 cup minced shallot

2 tablespoons chopped fresh cilantro (optional)

1 (14 1/2 ounce) can diced tomatoes
