Ingredients

8 cups shrimp stock

1 teaspoon saffron threads

2 tablespoons olive oil

4 cloves garlic, minced

1 onion, diced

7 oz (Spanish) hot chorizo, sliced into coins

2 teaspoons smoked paprika

3 cups Bomba (paella) rice

6 oz frozen artichoke heart quarters, defrosted

15 oz (canned) fire-roasted tomatoes, drained

5 oz jarred fire-roasted peppers, drained and sliced

1 1/2 cup frozen or fresh peas

1 lb medium shrimp

1/2 lb catfish, cut into 2-3 inch pieces

1/2 lb bay scallops

1/4 cup chopped Italian parsley

sea salt

freshly ground black pepper
