1 tablespoon fresh herbs, such as dill, basil, cilantro, or parsley, finely chopped

1½ teaspoons Old Bay seasoning

2-4 tablespoons bread crumbs

¼ cup mayonnaise

Salt and ground white pepper

1 large egg, lightly beaten

½ cup flour

4 tablespoons vegetable oil

½ cup dry white wine

½ cup shallots, finely chopped

1 cup whipping cream

2 tablespoons Dijon mustard

1 tablespoon fresh dill, finely chopped

1 tablespoon fresh basil, finely chopped
