This recipe does take more than 10 minutes to make but it is pretty good. My hubby, who is VERY picky, even enjoyed this meal. Will definitely make again. Oh, and the addition of the avocado definitely a keeper. It really helps bring out the flavors.

Ingredients for 6 servings

3 cup cooked Quinoa

5 cup Raw Broccoli, cut into small florets and stems

3 medium Garlic Cloves

2/3 cup sliced or slivered almonds, toasted

1/3 cup Freshly grated Parmesan

2 big pinch Salt

2 tbsp fresh Lemon Juice

1/4 cup Olive Oil

1/4 cup Heavy Cream

Optional toppings: slivered basil, fire oil (optional)**, sliced avocado crumbled feta or goat cheese
