2 pounds catfish fillets, thawed if frozen

3/4 teaspoon salt

1 teaspoon black pepper

1/4 teaspoon cayenne pepper

2 large eggs

1 1/2 cups cornmeal, preferably stone-ground

canola oil, for shallow-frying

CILANTRO-LIME TARTAR SAUCE:

1/2 cup mayonnaise

1/2 cup chopped cilantro

2 tablespoons lime juice

2 tablespoons chopped sweet onion

2 tablespoons dill pickle relish

1 tablespoon green hot pepper sauce
