These were great! Instead of 2 cups of pecans, I did 1 cup of pecans and 1 cup of walnuts. The apricots were REALLY hard to food process, so I wound up chopping them up by hand before adding to the processor. I also added in dried cranberries, dates and dark chocolate chips, and cut it down to 1 egg.

Ingredients

1 cup dried apricots

2 cups pecans

2 eggs

¼ teaspoon celtic sea salt

1 tablespoon vanilla extract

½ cup chocolate chips of your choice, or none whatsoever
