1 teaspoon ground ginger

18 large white mushrooms , stems removed

Eighteen 1-inch-thick zucchini slices

1 teaspoon coriander seeds

4 tablespoons lemon juice

1 garlic clove, chopped

2 tablespoons chopped onion

18 large cherry tomatoes

5 tablespoons olive oil

1½ teaspoons salt

12 fresh peeled, frozen, or jarred pearl onions (see note)
