Ingredients for 8 servings

3/4 cup heavy cream

1 tablespoon chopped fresh parsley

2 garlic cloves , minced

2 cups cubed day-old crustless French bread

FOR THE PANADA

white pepper

2 tablespoons olive oil

3/4 lb ground veal or venison or rabbit

1 1/2 lbs thinly sliced bacon

1 sprig thyme

1/2 cup unsalted shelled pistachio

1 small onion , chopped

FOR THE FORCEMEAT

2 teaspoons chopped fresh sage

5 ounces well-chilled pork fat, cut into 1/4 in cubes

3/4 lb ground pork

1 medium apple , peeled, cored and chopped

1 bay leaf

2 large eggs (room temperature)

FOR THE GARNISH

2 tablespoons whole green peppercorns

1/2 cup Applejack or other brandy

1 tablespoon chopped fresh thyme

1 sprig sage

1 teaspoon white pepper

1 teaspoon ground ginger

1 pinch mace

3/4 lb chicken liver

1 teaspoon allspice
