1 medium onion, chopped

1 large shallot, minced

2 x cloves garlic, minced

1 lb broccoli, stems and crowns, cut into chunks

4-5 cup chicken or vegetable stock

Kosher salt and freshly ground black pepper to taste

1 cup crème fraîche

1 1/2 tbsp prepared horseradish

2 tbsp chopped flat leaf parsley

2 tsp freshly-squeezed lemon juice
