1 cup all-purpose flour

1 cup milk

1/4 to 1/2 cup heavy cream

1/4 cup sugar

2 large eggs

1 egg yolk

1 vanilla bean, split lengthwise and seeds scraped (reserve the bean itself for the Apple-Date Butter)

1 tablespoon Grand Marnier or similar orange liqueur

Pinch of salt

Butter as needed

Apple-Date Butter:

6 apples, peeled, cored and cut into eighths

2 cups apple cider

8 ounces fresh Medjool dates, pitted and coarsely chopped

Reserved scraped vanilla bean pod

3 whole cloves

8 cardamom pods, lightly crushed

1 cinnamon stick


3 tablespoons sugar

3 tablespoons water

3 tablespoons butter

4 tablespoons Grand Marnier

1 teaspoon vanilla
