Ingredients for 4 servings

2 tbsp Butter

a pinch of saffron, 15 threads or so

3 x Leeks, thinly sliced and thoroghly cleaned

zest of one lemon

3 tbsp flat leaf parsley, chopped

1 x Carrot, peeled and diced

6 good chicken stock, I used 5 cups and one cup cup of water

Salt and freshly ground black pepper , to taste

1 can chickpeas, drained and rinsed

2 x large chicken breasts, do not cut up

1/4 cup Couscous
