1 red bell pepper, seeded and thinly sliced

Salt and freshly ground pepper, to taste

1 cup sliced green onions, white and green portions, plus more for garnish

8 oz. fresh chorizo sausage, casings removed

2 Tbs. unsalted butter

1 large russet potato, sliced into rounds 1/16 inch thick

3/4 cup grated sharp cheddar cheese

8 eggs, lightly beaten
