Ingredients for 40 servings

1/2 pound ground pork

Fresh Herb, Lettuce, and Cucumber Salad, recipe follows

1/2 lime

1/2 cup chopped onion

1 cup grated carrots

1 cup picked cilantro leaves

Carrot Salad, recipe follows

1/4 teaspoon black pepper

5 tablespoons nouc cham, recipe follows

1 fresh hot chile pepper (about 1 1/2-inch long), finely chopped

3 ounces crabmeat, cleaned

5 tablespoons water

1-tablespoon tree ear or cloud ear mushrooms, soaked in warm water for 30 minutes, thoroughly rinsed, drained and finely chopped

1 teaspoon sugar

10 sheets round banh trangs (dried rice wrappers available at Vietnamese or specialty markets)

1 1/2 teaspoons chopped garlic

1 tablespoon chopped shallots

2 cloves garlic, finely chopped

1 tablespoon plus 1 teaspoon sugar

1/4-cup fish sauce

Pinch salt

1 cup picked mint leaves

1/2 cup water

2 cups peanut oil

1 teaspoon white vinegar

3 cups bibb lettuce leaves

1 ounce noodles, soaked in warm water for 20 minutes, drained and cut into 1-inch pieces

1 cup cucumber slices, cut into semicircles

2 eggs, beaten
