Zest of 1 lemon

Zest and juice of 1 orange

1 bunch thyme

2 tablespoons black peppercorns

2 star anise pods

2 750 ml bottles red wine (lighter-bodied is better)

1 cup creme fraiche

1/4 cup maple syrup

2 teaspoons brandy
