250.0g bag trimmed, washed spinach leaves

2.0 tbsp lemon juice

2 garlic cloves , finely chopped

4.0 tbsp extra-virgin olive oil

1 red onion , finely chopped

6 plum tomatoes , peeled, seeded and diced

2 x 410.0g cans chickpeas (preferably organic), drained and rinsed

200.0ml dry white wine (2 small glasses)

½ tsp dried crushed chilli

4.0 tbsp light olive oil

550.0g salad potatoes (such as Charlotte)
