Ice cold water

*1/4 cup of grated Parmesan (optional)

*Sprinkle of Rosemary and Thyme to taste (optional)

Pâte brisée

1 tablespoon extra virgin olive oil, plus 1 teaspoon for greasing the pan

2 pounds yellow onions, about 6 medium, thinly sliced

3 large eggs

3/4 cup light cream

1/4 teaspoon freshly ground pepper

2 teaspoons whole cumin seeds

1 1/2 cups freshly grated Comté, about 5 ounces (substitute Gruyére)
