3 tbsp olive oil

leeks, white and light green parts only, thinly sliced

2 C chopped butternut squash (about 1/2 med)

1/4 C water

3 tbsp chopped fresh parsley

1 1/4 C cooked black beans or 1 can (15 oz) black beans, rinsed and drained

1/2 tsp salt

2 tbsp fresh lemon juice

1/4 tsp freshly ground black pepper

grated lemon peel (garnish)
