Ingredients for 8 servings

14-16 ounces canned whole tomatoes , with juice, chopped

3 lbs skirt steaks or flank steaks, trimmed

1 red onion , cut into 1/4-inch strips

3 tablespoons tomato paste

2 teaspoons cumin seeds

1 teaspoon dried oregano

For yellow rice with toasted cumin

1/4 teaspoon dried oregano

1 teaspoon ground cumin

1 bay leaf

1/2 cup Spanish olives with pimento , drained and halved

2 yellow bell peppers , cut into 1/4 inch strips

1 large onion , chopped coarse

3 garlic cloves , minced

1 cup frozen peas, thawed

1/4 teaspoon whole black peppercorn

For braising beef

2 celery ribs , chopped coarse
