1/3 cup meyer lemon juice (if using another variety, add 1/4 teaspoon sugar)

2/3 cup extra virgin olive oil

1/4 cup minced shallots

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

5 cups watercress leaves

5 cups pea shoots FISH:

1 1/2 teaspoons salt

8 salmon fillets, each about 1/3 pound and 1/2 inch thick

1 teaspoon freshly ground black pepper

1/2 cup dry white wine

1/2 cup fresh lemon juice

1/4 cup water
