2 1/2 cups bottled marinara sauce, divided

6 oven-ready, no-boil lasagna strips

9 ounces firm tofu, crumbled (about 1 cup)

2 tablespoons fat-free half-and-half or low-fat milk

1 egg

pinch of black pepper

1/8 teaspoon ground nutmeg

1 cup shredded part-skim mozzarella cheese,divided

1 1/2 teaspoons dried parsley

1 1/2 cups raw veggie of choice (thinly sliced zucchini, grated carrot, diced eggplant, or 1 cup thawed frozen chopped spinach)

1/4 cup shredded parmesan cheese
