200.0g oatcake biscuits

400.0g full fat soft cheese , such as Philadelphia

FOR THE rhubarb COMPOTE

½ vanilla pod , split in half lengthways

1.0 tsp vanilla essence

450.0g white chocolate

284.0ml pot double cream

250.0g golden caster sugar

85.0g butter melted

600.0g rhubarb (trimmed weight), cut into 2.5cm chunks
