1/4 cup minced fresh herbs, such as parsley, dill and chives

Salt and freshly ground pepper

1/4 cup plain dry bread crumbs

3/4 cup ricotta cheese

5 1/2 ounces soft fresh goat cheese

3 tablespoons grated aged goat cheese

1 cup plus 2 tablespoons skim milk

3 tablespoons cornstarch

5 tablespoons egg whites, at room temperature
