7 large egg whites, at room temperature

1 oz. (6 Tbs.) unsweetened natural cocoa powder

13 oz. bittersweet chocolate, chopped

2 cups heavy cream 

2 tsp. pure vanilla extract

1/4 tsp. baking soda

1/2 cup granulated sugar
