1 large yellow onion, finely chopped

2 celery stalks, thinly sliced

3 carrots, peeled and thinly sliced

3 garlic cloves, minced

2 cups yellow split peas, picked over, rinsed and drained

1/2 lb. andouille sausage, cut into 1/2-inch dice

4 cups chicken stock

1 bay leaf

Salt and freshly ground pepper, to taste

Finely chopped fresh flat-leaf parsley for garnish
