2½ leaves of gelatine, soaked

Seeds of 1 vanilla pod

200 g cherries, stoned

180 g caster sugar

Juice of half a lemon

20 g dried cherries

¼tsp citric acid (normally used to make elderflower cordial, obtained from pharmacies)

1 tsp bicarbonate of soda

120 g caster sugar

60 g strong bread flour

190 g plain flour

1 tsp salt

40 g caster sugar

15 g fresh yeast

100 ml goat

2 egg yolks

30 g unsalted butter

Sunflower oil for deep frying

100 g cherries, stoned

Zest of one lemon
