Ingredients for 12 servings

1/2 cup green onion , sliced

1/3 cup fresh cilantro , chopped

3 cups green cabbage

1/4 cup apple juice or apple cider

3 cups red cabbage

1/2 cup carrot , cut into small matchsticks

1/4 teaspoon salt

1 1/2 cups jicama , peeled and cut into bite sized strips

Cider Vinaigrette

1/4 cup apple cider vinegar

1/4 teaspoon white pepper

3 tablespoons salad oil (I used grapeseed)
