Ingredients for 4 servings

2/3 cup quinoa flour (80 g)

1/2 cup white rice flour (70 g)

1/3 cup cornstarch (40 g)

2 tbsp blond cane sugar

Pinch of salt

6.5 tbsp (90 g) butter, room temperature (not soft) and diced

1 small egg

1.5 tsp xantham gum (optional but helps the crust to be less crumbly, making it easier to roll)

12 x fresh figs, washed and cut in quarters

4 tbsp blond cane sugar

4 tbsp almond meal

1 x vanilla bean, split open and seeds grated

1 inch ginger, peeled and finely grated
