Ingredients

The dressing/marinade:

3 tablespoons freshly squeezed lemon juice

1 1/2 teaspoons dried oregano

2 teaspoons minced garlic

-- Kosher salt and ground black pepper, to taste

1/2 cup olive oil

The sandwich:

2 small (about 5-6 ounce) chicken breast halves, cut lengthwise into eight 1-inch strips

1/3 pound English or pickling cucumber, diced

1 cup grape or cherry tomatoes, quartered or halved if small

1/4 cup minced scallions, white and green parts

4 small (about 8-inch) flatbreads or pita pockets

1/4 cup prepared hummus

-- Tahini sauce, for drizzling
