  • 2 Tbsps granulated sugar
  • 2 Tbsps garlic powder
  • 1/2 cup essence, recipe follows
  • 1/2 cup white wine vinegar
  • 1 Tbsp dried leaf oregano
  • 1 bone-in boston butt pork roast, 6 to 8 lbs
  • 1 Tbsp dried thyme
  • Kosher salt and freshly ground black pepper
  • 1 Tbsp cayenne pepper
  • 1 cup hickory, mesquite, pecan or apple wood chips, soaked
  • 1/2 cup apple cider vinegar
  • 1 tsp crushed red pepper flakes
  • 2 Tbsps salt
  • 1 Tbsp onion powder
  • 2 1/2 Tbsps paprika
  • Hamburger or hoagie buns, lightly toasted if desired, for serving
  • 1 Tbsp black pepper
  • 1 Tbsp hot pepper sauce
