1 pound ground chicken

1/2 cup corn kernels, fresh or frozen, if frozen do not thaw

salt and freshly ground white pepper

2 tablespoons unsalted butter

1/2 cup all-purpose flour, plus more for dusting

2 teaspoons ancho chile powder or New Mexico chile powder

1/2 teaspoon sweet paprika

1/8 teaspoon ground cumin

1/4 teaspoon dried oregano

1 cup water

2 or 3 poblano chiles, roasted, peeled, seeded, and chopped

3 ounces monterey jack cheese, shredded

2 teaspoons fresh lime juice

1 batch cornmeal crust dough
