1 loaf of (stale) Udi's Whole Grain Gluten-Free Bread, cubed

1 small bunch of kale, torn into small pieces

8 oz. button mushrooms, sliced

1 medium onion, thinly sliced

2 tbsp. olive oil

1/2 tbsp. dried sage

1/2 tbsp. dried thyme

1 1/2 c. vegetable broth

1 egg, beaten

salt and pepper to taste

cooking spray or oil mister
