  • 1 1/2 Tbsp. active dried yeast
  • 1 cup lukewarm water
  • Pinch of sugar
  • 2 Tbsp. olive oil
  • 1 tsp. salt
  • 1 1/4 cups plain white flour
  • 2 cups stone ground whole wheat flour
  • 4 ripe Roma tomatoes (rinsed and patted dry)
  • 1 clove garlic
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried basil
  • 1/2 tsp. onion powder
  • 1-2 cups FRESH spinach (NO CANNED OR FROZEN SPINACH)
  • 2 cups low fat shredded mozzarella cheese
  • 2 Tbsp. shredded Parmesan/Romano cheese
