The sauce was quite good but I added some fish sauce as it was missing something. Also, don't use a London Broil - way too tough. A nice skirt or flank steak would be much better.

Ingredients

One 2-pound London Broil

Kosher salt and freshly ground pepper, to taste

Olive Oil

1 can coconut milk (13.5 oz)

3 tbsp Peanut Butter

4 tbsp Brown Sugar, packed

2 tsp Curry powder

2 tbsp fresh squeezed lime juice (about half a lime)

Steamed rice, to serve

*optional garnish: toasted coconut and green onions sliced thinly
