8 large eggs, lightly beaten

2 to 3 tablespoons cream or half-


Salt and pepper to taste

6 tablespoons unsalted butter, or more as needed

About 20 slices of smoked salmon, cut to the same size as the toast

(about 8 ounces total)

6 to 8 tablespoons sour cream or creme fraiche

2 to 3 tablespoons chopped chives

4 tablespoons caviar of choice
