Just got yellow beets in my CSA box today. This seems like a good option for the non-beet eaters in my house!

1 1/2 pound yellow beets (4 large or 8 small)


Juice and zest of 1/2 lemon

1 cup fresh ricotta

1 small garlic clove, minced

1/2 cup finely shredded basil leaves, loosely packed - plus extra for garnish

1/4 cup - plus 2 tablespoons finely grated Pecorino Romano cheese

1/2 teaspoon freshly ground black pepper
