1 Teaspoon Pumpkin Pie Spice or Cinnamon

1/4 Teaspoon Xanthan Gum

1/2 Cup Packed Brown Sugar (see below for unrefined sweetener option)

1/3 Cup Oil (I used coconut oil)

1/2 Cup Pumpkin Puree

1 Cup Vanilla Milk Alternative (I used Hemp Bliss)

Optional: Add 1/4 to 1/2 Teaspoon Baking Powder for lower altitudes (below 3000 feet) or for a cakier result
