Ingredients for 4 servings

Vegetable oil for basting

3 tablespoons chickpea flour or all-purpose flour

2 tablespoons olive oil

2 to 4 hot fresh green chilies

2 large cloves of garlic ( 1/2 ounce), peeled

Fresh coriander and lemon juice for garnish

1 small cauliflower (1 1/2 pounds), cored and stemmed

1/3 teaspoon turmeric (optional)

1/4 teaspoon black pepper

3/4 inch fresh ginger ( 1/2 ounce), peeled and cut into chunks

1/4 cup yogurt

1/4 teaspoon cayenne pepper

1/4 teaspoon carom (ajwain) seeds, crushed, or 1/2 teaspoon dried thyme

2 teaspoons ground cumin

2 teaspoons dried fenugreek leaves or mint leaves

1 teaspoon salt
