1/4 cup low-fat sour cream

1/4 cup + 1 tablespoon olive oil

Kosher salt and freshly ground black pepper

1 medium-size butternut squash

2 medium-size shallots, thinly sliced

Canola oil, for frying

6 cups cooked brown rice (see Note)

2 cups cooked black beans, drained

1 red bell pepper, cored and thinly sliced

1 avocado, pitted and sliced
