  • 1 Tbsp olive oil
  • 4 x 200g chicken breast fillets, trimmed
  • sea salt and cracked black pepper
  • 50 g unsalted butter
  • ¼ cup oregano leaves
  • 1 Tbsp white wine vinegar
  • 2 x 400 g cans cannellini beans, drained and rinsed
  • 1 clove garlic, crushed
  • 110 g goat's cheese, crumbled
